Yummy Peach Cobbler


A few years ago, I saw this recipe on a morning talk show and I quickly jotted it down on a scrap piece of notebook paper. It quickly climbed the charts to become one of my family's favorite desserts. Everytime I make it, I hear, "Man, that's good!" It's a little different than traditional cobbler, and the recipe can be adapted to use any fruit that you might want to use. Let me know what you think!

Peach Cobbler


8 cups fresh fruit (or frozen fruit + 2T flour)
2½ cups sugar, divided
pinch of salt
1 Tbsp vanilla
2 cups flour
1 cup sliced almonds or chopped pecans
1 tsp baking powder
½ tsp salt
shredded coconut (optional)
1 cup cold butter
2 eggs
Mix fruit, 1 cup sugar, pinch of salt, and vanilla in a bowl. Let it stand 25 minutes, stirring about every 5 minutes. Place in a 9x13 casserole dish.
In another bowl, mix flour, 1½ cups sugar, almonds or pecans, baking powder, salt and coconut if desired. Cut in cold butter. Add eggs and mix until dough forms.
Plop spoonfuls of dough on top of fruit to cover it. Bake at 350 degrees F for 1 hour.

**I have always made it with coconut and either almonds or pecans. I haven't tried any other fruit, but I bet it would be good with summer berries. I always serve it with vanilla ice cream (Blue Bell Vanilla Bean is my favorite). I hope you love it like we do!
